EXPERIMENTING WITH THE LAST OF THE BOAR MEAT

This backstrap turned out great. It was topped with 2 cloves of garlic and a big fat jalapeno ground in a chopper. It simmered in this electric skillet for 6 hours. After it maxed out at 150 degrees, the temp was cranked up a little to bring it to 170 degrees. Things always taste better cooked on the back of a trailer.
